If you are anything like me, a fry-aholic then you suffer from the frustration of trying to find fresh-cut, deep fried french fries close to your home.

I have experimented with numerous recipes and cooking methods, and for me the perfect fry takes some time and practice.  I have also found that a deep fryer with a temperature gauge is an invaluable addition to my cooking paraphernalia.

This is the method that I find works the best.

  • Potato - Russet

  • ¼" cut

  • Cooking Method - 2 stage deep frying

  • Peanut Oil

  • Initial cooking at a pre-heated oil temperature of 350 degrees for 9 minutes (potatoes at room temperature before starting).

Sometimes it is necessary to adjust the initial cooking for a minute or so longer, if the potatoes are very moist.

  • Remove fries from oil and allow to cool

  • Second cooking at a pre-heated oil temperature of 375 degrees for 2 minutes.

In my opinion, the perfect french fries!
